Today’s class will be centered around a delicious and hearty meal inspired by the book A Honey for the Beekeeper, written by Nina Crespo. We will start by preparing Cowboy Butter, a flavorful and creamy compound butter that's perfect for steaks, vegetables, and even pasta. Cowboy butter is made with a mix of ingredients like garlic, fresh herbs, lemon juice, and, of course, a touch of spice, bringing an irresistible kick to any dish. It's a perfect accompaniment to our next dishes, Pasta and Steak.

We’ll begin by making the Cowboy Butter, which includes ingredients like garlic, parsley, chives, paprika, lemon juice, Dijon mustard, and a bit of cayenne pepper for heat. This rich butter will be the key to taking our steak to the next level and adding extra flavor to our pasta.

Afterward, we’ll move on to the Pasta, where we’ll incorporate the cowboy butter, letting its creamy texture and flavors soak into the noodles. We’ll top it with freshly grated Parmesan to add a savory, salty finish.

Next, we’ll prepare the Steak, searing it to perfection and finishing it off with a generous dollop of our homemade cowboy butter, allowing the flavors to melt into the steak, creating a mouthwatering experience.

Finally, we’ll end the class on a sweet note with a Honey-inspired Dessert from the author’s new book, A Honey for the Beekeeper. The dessert will highlight the natural sweetness of honey, incorporating it into a delicious treat that is the perfect ending to our cowboy-themed meal.

What makes this class extra special is that the author of  A Honey for the Beekeeper, will be present to sign copies of the book! Attendees will receive a copy of the book before its official release date, making this an exclusive and memorable experience.

Ready to up your charcuterie game? In this class, Chef Cecilia will offer step-by-step techniques and walk you through the process of designing TWO visually pleasing boards- one sweet and one savory while sharing her best tips and tricks for carving and shaping fruit, vegetables, cheese and a selection of meats.

Step 1: Meats

Meats are usually one of the largest components on the board, so start there. Play up the variety by offering at least two to three different types of meats. Chef Cecilia will show you how to create roses and other flower shapes to compliment your Valentine’s theme.

Step 2: Cheeses

Next, start filling in the board with cheeses. Pick out two to three different kinds of cheese with varying flavors and textures.

Step 3: Accoutrements

Now it's time to add the extras that help you build the perfect bite: Sweet & Salty, Chocolate, Dips, Jellies & Spreads

Step 4: Crispy Canvas

Finally, fill in any remaining blanks with crackers, breads, or vegetables. This is the foundation upon which you custom-build each delicious mouthful.

Step 5: Getting Fancy

Common decorative flowers that are safe to eat and look lovely. Plus, as it’s almost Valentine’s Day, you’ll add some chocolate dipped strawberries and handmade chocolate truffles!

And, just in case you were wondering charcuterie is pronounced "shahr-ku-tuh-ree."

Tamales are considered among the top comfort foods in Mexican families. When the time comes for family to make them, it is an all-day affair. These labours of love filled with meat or cheese are wrapped in masa then corn husk and steamed until done. Tamales are made different from regional and individual interpretations but the outcome is still the same great comfort food. Chef Cecilia has cut a whole day process of making this traditional dish down to 3 and half hours. Not only will you make the Masa but also the Traditional Salsa Roja known as Red Chile Sauce.

Chef Cecilia will teach you tips on layering your seasoning, how to achieve the crispness and choose and learn how to make one of these delicious sauces: Classic Spicy Buttery Buffalo Sauce, Lemon Pepper Sauce, Teriyaki, or Honey Garlic. While our wings are baking we will work on another tasty appetizer- classic Italian bruschetta. The freshness of basil and garlic tossed in a simple, yet tantalizing sauce and served on a toasted baguette make bruschetta a winning appetizer for any occasion.
