There’s no need to be intimidated by bread! In this hands-on 101 class, Mary Storey will teach you the basics of making delicious fresh bread at home. She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Mary will teach you to make a compound herb butter too!

Join Brian Knowles as he walks you through making your very own version of Korean Kimchi (which you’ll take home to enjoy with family and friends) with a few simple ingredients. Kimchi can be eaten on its own as a healthy snack or incorporated into many tasty dishes, such as fried rice, and dumplings to name a few.
What you’ll make in class:
Korean Kimchi from Scratch (which you will bring home to complete the fermentation process)
Kimchi Pancakes (made with Brian’s fermented Kimchi)
In class, while your cabbage goes through it first stage of fermentation, you’ll make and enjoy Brian’s favorite recipe-Kimchi Pancakes, with kimchi that has been fermented ahead of time for you.
There are more versions of kimchi than you can count, but Brian will be teaching you his favorite that is easy to make and slowly ferments in the fridge which is perfect for hot and humid weather.
Traditional kimchi is made up of napa cabbage, various vegetables, aromatics and a few other ingredients, including the ever important gochugaru (Korean chili powder).
Without sounding like a science teacher, kimchi is made by lacto-fermentation, the same process that creates sauerkraut and traditional dill pickles. In the first stage, the cabbage is soaked in a salty brine that kills off harmful bacteria. The second stage is where lactobacillus bacteria (the good guys) convert sugars into lactic acid, which preserves the vegetables and gives them that wonderful, tangy flavor.
After you eat your kimchi pancakes, you’ll finish up your own kimchi which you will take home and can enjoy the next day or in two weeks. How long you let it ferment is up to you.
Kimchi is very popular due to its range of health benefits from probiotics, vitamins and antioxidants, which are said help support your digestive and immune systems.
Making your own kimchi can sound intimidating, but with a few simple ingredients, you too will be able to make it at home to suit your tastes.

Join Louisiana native-Suzy Fleming Leonard (retired food and dining editor at FLORIDA TODAY) for a fragrant evening recreating the official dish of Louisiana: Gumbo!
In this class, you’ll learn how to make a chicken, sausage and okra gumbo. Master this recipe, then adapt it to feature turkey, seafood or almost any leftover protein.
In this class you will:
Chop and prepare the Cajun Trinity of onion, bell pepper and celery
Create a dark brown roux from butter and flour
Make a zingy rémoulade dressing for a crisp green salad
Make your own Cajun seasoning, tailored to your personal taste
While the gumbo flavors marry in the cooking pot, we’ll give a brief tutorial on the ABCs of roux, from a blond roux that adds flavor and heft to classic Cajun étouffée to the dangerously dark roux adds a depth and mystery to your gumbo.
We will also teach you a little history of gumbo, the differences between various gumbos and how to customize the dish to your liking. Whether you’re looking for a delicious way to use up leftover Thanksgiving turkey or you need to feed a crowd, gumbo is the perfect dish to warm up a cool fall day. There’s a reason this is the official dish of Louisiana.
Your work will be rewarded with dinner of gumbo, green salad and crusty French bread and of course a FABulous Dessert!

Join our One Day Camp making Homemade Pasta from scratch, delicious Focaccia and a fresh Tomato Sauce. To begin you will make the dough for your focaccia and put it aside too proof. Next, you’ll make tender, fresh egg pasta dough from scratch and while your dough is resting you will learn to make fresh flavorful butter tomato sauce using cherry tomatoes, fresh garlic and dried herbs finished off with fresh basil. After shaping and seasoning your focaccia we’ll pop it in the oven and you will roll, cut and cook your pasta (or take some home to cook for dinner!) Join Brian Knowles as he teaches you how to make two of his favorite (and easiest) breakfast items using sourdough discard.
First he will teach you how to make what may be the easiest bread ever-English Muffin Bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the cornmeal bottom giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.
Just add all the ingredients to a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!

In the second of our Homesteading 101 series, Brian Knowles will teach you how easy it is to make Fresh Ricotta at home. To go along with our ricotta, we will be making Crunchy Lavash Crackers and warm Tomato Bruschetta. These three things are great for entertaining or just when you need a snack.
THIS IS ONE CLASS YOU DEFINITELY WANT TO TAKE! Rory and I brought home the leftovers from the photoshoot and once the kids saw what we had there wasn’t a scrap left! The ricotta is unreal- nothing like the stuff you get in the supermarkets!

Crunchy Lavash Crackers
Tomato and Balsamic Bruschetta
You will not believe how easy it is to make Fresh Ricotta. You will never use store bought again! It is made with five ingredients that most people usually have in their kitchen. It will take you less time to make than it would to drive to the store. This is a strained ricotta, and it spreads like cream cheese but with the richness of crème fraîche. It is fantastic spread on a baguette slice and drizzled with honey. Add it as a sauce to your next pasta dish or layer it in lasagna, the uses for fresh ricotta are endless. You can even add a scoop to a salad!
Lavash Crackers are the perfect vehicle to eat your ricotta. These crackers hail from the Middle East and come together quickly in the food processor. Rolled out thinly, sprinkled with your favorite toppings and baked until crunchy. The beauty of these crackers is in their rustic look, no need to worry about a perfect square as they are meant to be broke up in pieces.
As the perfect counterpoint to the creamy ricotta and the crunchy crackers, we will make Tomato and Balsamic Bruschetta. If you have ever taken Angelas French baguette class, then you are familiar with her bruschetta that gets served alongside them. Tomatoes, garlic, balsamic vinegar and fresh basil are delicious on their own, but even more so paired with ricotta and lavash.

Okay, so there is some debate at FAB about what to call these- Similar to Travel Cakes, but baked in pie tins for easy transport (and storage as they last a good while) but where Travel Cakes or Gateaux de Voyage generally only have a dusting of confectioner’s sugar or a light glaze, these beauties are covered with an Italian Meringue Buttercream Hybrid frosting and then covered with delicious coconut.

Join Rory McEllin and recreate some of the McEllin family’s favorite quick dinner dishes. Perfect for a mid week family dinner and easily adaptable for feeding a crowd!
Pollo y Chorizo Epañol: Spanish Chicken, Chorizo Sausage and Potatoes (plus a couple of secret ingredients) roasted to perfection (and quick to assemble so you can pop it in the oven and get on with other things!)
Orange Summer Salad: Fresh, sweet and loaded with flavor, this easily adaptable summer salad is topped with an amazing homemade orange salad dressing so good you’ll wonder where it’s been all your life! The little bit of sweetness is the perfect foil for the savory Spanish Chicken.
Budino di Cioccolato: In Italy it’s served warm like a thick, luscious hot chocolate, but chilled it is like an elegant adult version of chocolate pudding, but sooooo much better- plus you can customise the flavor by raiding Angela’s liquor shelves! Rich, chocolaty goodness in a cup- topped with Chantilly Cream or Toasted Meringue, you really can’t go wrong either way.
This is a perfect Date Night or Friend’s Night Out as you can BYOB! (Please drink responsibly!)

Today’s class will be centered around a delicious and hearty meal inspired by the book A Honey for the Beekeeper, written by Nina Crespo. We will start by preparing Cowboy Butter, a flavorful and creamy compound butter that's perfect for steaks, vegetables, and even pasta. Cowboy butter is made with a mix of ingredients like garlic, fresh herbs, lemon juice, and, of course, a touch of spice, bringing an irresistible kick to any dish. It's a perfect accompaniment to our next dishes, Pasta and Steak.
We’ll begin by making the Cowboy Butter, which includes ingredients like garlic, parsley, chives, paprika, lemon juice, Dijon mustard, and a bit of cayenne pepper for heat. This rich butter will be the key to taking our steak to the next level and adding extra flavor to our pasta.
Afterward, we’ll move on to the Pasta, where we’ll incorporate the cowboy butter, letting its creamy texture and flavors soak into the noodles. We’ll top it with freshly grated Parmesan to add a savory, salty finish.
Next, we’ll prepare the Steak, searing it to perfection and finishing it off with a generous dollop of our homemade cowboy butter, allowing the flavors to melt into the steak, creating a mouthwatering experience.
Finally, we’ll end the class on a sweet note with a Honey-inspired Dessert from the author’s new book, A Honey for the Beekeeper. The dessert will highlight the natural sweetness of honey, incorporating it into a delicious treat that is the perfect ending to our cowboy-themed meal.
What makes this class extra special is that the author of A Honey for the Beekeeper, will be present to sign copies of the book! Attendees will receive a copy of the book before its official release date, making this an exclusive and memorable experience.
