Nothing says the holidays like gingerbread. But this Gingerbread Latte Layer Cake is not your ordinary gingerbread. This is gingerbread taken up a notch.
This is the cake form of a gingerbread latte found at coffee shops during the holidays. Imagine a coffee buttercream between three layers of a gingerbread cake. Then more coffee buttercream on the outside as well as a white chocolate ganache drip to imitate the foam found on a latte. For a bit of whimsy the outside of the cake will be decorated with your own freshly baked gingerbread cookies in the shape of your choosing. Don’t worry, there will even be enough gingerbread cookies to eat on the way home.
Don’t worry about the coffee buttercream, the flavor is subtle and just enhances the gingerbread flavor. Avoiding caffeine? A decaf option will be available or you could also choose to another flavor for your buttercream.
As this cake is baking, your house will fill with the aromas of the holidays. Brown sugar, molasses, and warm spices in the gingerbread cake will bring everyone running to the kitchen.

A Traditional Taste of Italy: Panettone with Mary Storey
Join Mary Storey for a cozy and festive evening as you learn the art of making Traditional Panettone — the iconic Italian Christmas bread. In this hands-on class, you’ll shape, fill, and bake your own panettone using a pre-risen dough (no waiting around!). While your loaf bakes, you’ll mix up a fresh batch of dough to take home and bake later — perfect for sharing with friends and family.
Panettone is a soft, buttery, brioche-like bread traditionally enriched with citrus zest and a mix of dried and candied fruits, then baked into its signature tall dome in a paper mold. But if dried fruit isn’t your thing, don’t worry — we’ll also have chocolate chips and a variety of nuts like pistachios and hazelnuts available for your custom creation.
To top off the experience, Mary will treat you to a slice of her freshly baked panettone and a surprise panettone-based dessert — with the recipe included, of course!

Although the traditional bee sting cake is made with a sweet yeast dough, Brian has chosen to make his with a moist honey cake. The cake is sliced in half and filled with a stabilized diplomat cream. Diplomat cream is a vanilla pastry cream that is then lightened up with some sweetened whipped cream. Gelatin is added to the whipped cream to help stabilize the filling. Raspberry jam, not found in the traditional bee sting cake, is spread between the layers. The jam helps cut through the richness of the diplomat cream and the honey cake. Brian will teach you how to make a soft caramel to spread on top of your cake which then has toasted almond slivers sprinkled on top.
Brian’s Stinging Bee Cake is sure to be the star of any celebration or meal, not just Oktoberfest. This cake holds up well for three or four days (if it lasts that long) and gets better with age. Leftovers (if there are any) go well with a cup of tea for an afternoon pick me up.

London Fog Cake takes the flavors of a London Fog latte and puts them in to a cake. You have layers of deliciously moist Earl Grey tea infused cake, silky smooth Earl Grey buttercream, and salted caramel drips for a cake sure to impress everyone.
Earl Grey tea is a black tea blend flavored with the oil found in the rind of the bergamot orange, which give it its unique aroma and flavor. The name ‘London Fog’ comes from the effect of foamy milk hitting the black tea and creating a cloud-like plume, resembling a foggy London afternoon, even though the drink was created in Canada.
To achieve the London Fog flavor in cake form you start off steeping Earl Grey tea in milk that will be used in both the cake and the buttercream. The cake layers also have loose leaf Earl Grey tea added to the batter to create a lovely flecked appearance, along with sour cream and cake flour keep the layers moist and tender. For more London Fog flavor, you can add a few drops of either bergamot or lavender oil to both the cake batter and buttercream.
The finished cake is beautifully decorated with a salted caramel drip, buttercream rosettes and loose leaf tea sprinkled on top. Although salted caramel is not traditionally part of a London Fog, it adds some sweet complexity to the whole cake and grabs your attention. Earl Grey tea lovers will be in heaven with this cake!

Join Mary Storey for a fun evening making THREE varieties of delicious Rugelach. Is it a pastry or a cookie? Well, technically it’s a pastry disguised as a cookie so you can call it a pookie or a castry if you like, but really who can talk with a mouth full of Rugelach?
You’ll start by selecting your THREE Fillings: A Fruit Filling, Cinnamon Sugar (with or without nuts) and a Chocolate version.
Using dough that has already been prepared (as it has to be refrigerated overnight) you’ll learn the different rolling techniques for both the Crescent and Pinwheel versions. While your cookies are baking, you’ll make a batch of dough to bring home so you can recreate these festive treats whenever you like! We will start off the day making our Panna Cotta and Fresh Berry Coulis (almond cookie crunch will be provided but recipe will be given) then students will make Ciabatta dough for rolls. Once the bread dough is made we’ll will begin work on our lunch- making Semolina Pasta Dough (to be used twice during class once for lunch and again later for hand cut noodles) while the dough is resting they will begin chopping veggies and preparing the Minestrone Soup. While the soup is simmering on the stove they will shape the pasta for minestrone. After lunch is eaten they will shape ciabatta rolls and second proof. Then students will begin working on Baked Ricotta Gnuderi making the dough and sauce and assembling to be baked later at home or frozen for another time. Finally ciabatta will be baked and you’ll finish by rolling and hand cutting noodles and learning how to assemble the classic Cacio Pepe Sauce.

Join Mary Storey for an enchanting morning recreating the world’s most famous cake, the Classic Austrian Sacher-Torte,
Sumptuous Chocolate Cake Layers filled with
Delicious Apricot Jam and smothered in an
Indulgent Dark Chocolate Glaze and decorated with
the distinctive Sacher Piping and Edible Gold Leaf
The cake itself is the consequence of several lucky twists of fate. The first was in 1832, when the Austrian State Chancellor, Prince Klemens Wenzel von Metternich, tasked his kitchen staff with concocting an extraordinary dessert to impress his special guests. As fortune had it, the chef had fallen ill that evening, leaving the apprentice chef, the then-16-year-old Franz Sacher, to perform this culinary magic trick. Metternich’s parting words to the talented teenager: “I hope you won’t disgrace me tonight.”
Franz Sacher seized the moment and conjured up the confection of a lifetime, the chocolate cake that would go down in history as the ne plus ultra of desserts: the Original Sacher-Torte. Disgrace, in any case, was not on the menu that evening. The cake soon gained a cult following, and was deemed “presentable at court”. From then on, it was a favorite at the imperial court and soon went on to win the hearts (and palates) of the world.

During the class you’ll make TWO varieties of the Dolci Alla Siciliana, Italian Pastry Cream, Lemon Curd and Italian Rum Balls.
