Join Mary Storey for this unique Holiday Macaron class making these adorable Festive Wreaths- which would  make adorable place settings too (you can do classic round macarons too!)

For the wreaths you’ll learn to pipe perfect circles to form your wreaths and you’ll take home a selection of adorable Italian Macarons in a selection of flavors to share with your family and friends. You’ll make a delicious Chocolate Ganache Filling in your choice of flavors plus, Mary will have a batch of Italian Meringue Buttercream ready for you to flavor so you can go home with a variety of flavors… you can even go seasonal with Eggnog, Gingerbread or Apple Pie flavors (or choose one of our Boozy Liquor flavors…dozens of other non alcoholic flavor options available too!) Plus, Mary will show you how to decorate your wreaths to perfection with royal icing, elegant sprinkles and luster dust.

*Italian Macarons are similar to their better known cousin the French Macaron, but are more robust and versatile-allowing you to make multiple colors from the same batch and easier for piping shapes. The methods are very similar, so if you’ve made French Macarons before, you’ll be creating multi color adorable macarons in no time!

Class fee includes a set of the 3-piece molds to make more at home. Many students in our previous classes had difficulty purchasing them online, so we're giving you the ones you'll be using in class to take home! 

In this hands-on class, you'll learn to make and decorate the season's hottest trend- Fall Flavored Hot Chocolate Bombs! We're adding an adult twist- you can choose to fill your bombs with traditional fall flavors or turn them into flavored coffee bombs or go boozy and add your choice of liquor to our rich chocolate ganache filling! You'll also learn the art of tempering chocolate for perfect results every time!

We use only the finest Belgian Chocolate (Callebaut) and other ingredients to make these delightful treats. During class you'll enjoy a taste of your choice of chocolaty goodness and you get to bring home all the bombs you make to share with your friends and family!

Learn the secrets to successfully tempering chocolate from local Chocolatier Mary Storey of Mary Storey Confections. You’ll learn several ways to temper- seed, microwave and tabling- plus all the tricks to ensure you avoid the dreaded chocolate bloom.

From selecting the perfect ingredients to getting the perfect shiny snap, Mary will guide you through the various methods to perfecting your chocolate. There’s a bit of chemistry but don’t worry- you needn’t remember your periodic table- Mary will demystify everything for you.

Calling all budding Chocolatiers and Confectioners…Angela McEllin and Mary Storey of Mary Storey Confections are the duel instructors for this Wonderfully Wonky Confectionary Workshop!

This camp is designed to for anyone that wants to channel their inner Wonka and learn how to make all those wonderful confections from scratch (and without all the scary ingredients!) In addition to creating all the wonderful confections, you’ll learn to hand temper and color chocolate professionally.

We use only the finest ingredients including Nature’s Flavors and Amaretti flavorings and Callebaut Belgian Couverture Chocolate (the same stuff they use in the fancy chocolatiers.)

  • Chocolate Covered Honeycomb- release your inner mad scientist and learn to create this delicious confection…Whether you call it honeycomb, seafoam, cinder toffee or sponge candy, this is a seriously fun and exciting recipe to make! Once dipped in chocolate it becomes one of Rory’s (and Chef Scott’s) favorite sweets!

  • Homemade Fudge - with dozens of options to choose from, the hardest part of this recipe is choosing your flavor! You can go the traditional, purist route, or add any of our delicious inclusions in for a bit of texture…nuts/chocolate chips/caramel or toffee pieces/chopped candies/M&M’s/cookie pieces/dried fruit- the possibilities are endless!

  • Chocolate Vignettes- Learn how to make a set of gorgeous Chocolate Bar Vignettes in your choice of themes and create beautiful embellishments from our hundreds of molds (we just received a shipment of cool Anime, Harry Potter, Star Wars and Animal molds) to top your choice of Callebaut Dark, Milk, or White Chocolate bars. You can also add edible lace, sprinkles, sweets, dried fruit or nuts to personalize your Vignettes.

  • Pâte de Fruit Pinwheels (and you can dip some in chocolate too if you like!) you’ll learn to make Pate de Fruit (homemade fresh fruit jelly) from scratch and then cover with a layer of homemade marshmallow ready to roll up and devour. Choose to dip some of them in chocolate and you’ll have a beautiful presentation box of confections fit to fill the window of a patisserie!

  • Fondant Creams- Think of a deluxe version of Peppermint Patties, or the delicious Orange, Raspberry, Coffee, Coconut, Vanilla or Strawberry Creams (and we have hundreds of other all natural flavor options to choose from) and then cover them in chocolate. Divine!

  • Along the way you’ll also learn to make Mediants, Nonpareils, Homemade Rocky Road, use chocolate transfer sheets, dip, drizzle and pipe chocolate and how to fill and unmold chocolate Bonbons.

  • At the end of the week, for those wishing to start or update their portfolios, each camper will have the opportunity to create a completely unique display of the weeks’ confections using our props, plates and backdrops and Angela will teach you how we do a food photoshoot.

    Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

    Suitable for ages 10 and older - no exceptions. NUTS and Dairy are used during this camp. If your child has any food allergies, food intolerances or aversions, please contact us before signing up.

You’ve asked for weekly meal prep, so Chef Cecilia is delivering…a class on mastering your own meal prep that is. Come along and learn the easy way to have hassle free weeknight meals ready in a flash! In this Asian Cuisine Meal Prep Class Chef Cecilia will teach you all the tips and tricks for taking the stress out of meal prep, plus you’ll go home with all the recipes and we even provide the reusable meal prep containers so you can make your own meals every week if you like!

During the class you’ll learn to make Miso Soup and how to prepare 3 Asian Noodle Dishes (using different types of noodles) and combine/alternate the basic ingredients in a number of different ways so you will have a variety of different meals throughout the week.

Join Sidney Galpern of Simi Cakes for this fantastic foray into all things Isomalt! In this class you will learn the fundamentals of working with isomalt to create a beautiful undersea isomalt sculpture. (You have the choice of either one large or two smaller sculptures for Dynamic Duos.)

Isomalt is a sugar-free hard candy, that we can heat to pour into molds, pull to sculpt with, or use for blown sugar techniques.  It is slightly sweet, and holds up better than sugar to humid environments.

We will be covering a wide variety of topics in this hands-on workshop, including casting into molds, pulling and hand sculpting, blown isomalt bubbles, abstract isomalt techniques and accents, structure, stability, safety, coloring, flavoring, painting, impressioning, overcoming humidity, and MORE as each student assembles a unique under the sea themed sculpture.  You will leave this class with a strong isomalt knowledge base to recreate these techniques in your own kitchen right away.

White and Dark Callebaut Belgian Chocolate and while they are setting, you’ll go on to make a box filled with gorgeous decorated Chocolate Mendiants. Once your chocolates are set, it’s on to the fun bit…decorating! Mary will show you how to create the beautiful watercolor effects, hand paint using edible luster dusts, create tiny embellishments and of course add contrasting chocolate drizzles!

Crispy, creamy and oh so captivating, these Trubochki* will have you looking for excuses to make them. Come along as Angela McEllin teaches you all about this delicious melding of eastern and western European delicacies. You’ll start by making pizzelle batters in a selection of flavors (pictured are chocolate, pistachio, raspberry and classic anise, but you can choose whatever flavors strike your fancy.) While the batters rest, we’ll create our fillings**- again, the sky (and Angela’s extensive flavor and liquor collection) and your imagination are the only limits! Once the batter is rested, we’ll begin baking and shaping the pizzelles; and, once they are cool, we’ll coat the Trubochki with chocolate to prevent soggy bottoms (this step is optional, but highly recommended if you want to have them pre-filled for an event- plus, who doesn’t love chocolate?) Finally, we’ll fill and decorate the Trubochki. Best of all, you’ll be able to enjoy Angela’s Trubochki so you can bring home all of your beauties to share with friends and family (or not, we won’t judge!)

From selecting the perfect ingredients to making a smooth-as-silk ganache, Mary will guide you through the techniques to perfecting a variety of truffles. We use only the finest Callebaut and Valrhona Milk, Dark and White Chocolate to create your little beauties and you’ll have the option of flavors (and liquors) to customize to your own tastes. As well as a selection of beautiful decorations to complete your chocolate jewels.

Best of all, you’ll take home TWO boxes of beautifully decorated delicious truffles to share with your family and friends- or not, we won't judge.

Join Mary Storey for this unique Holiday Macaron class. You can choose between creating a beautiful Stacked Christmas Tree Centerpiece (perfect for your holiday dinner table) or the adorable Festive Wreaths- which would  make adorable place settings too! 

For the Stacked Tree you will learn to make, color and pipe sets of concentric stars which will later be filled, stacked and decorated with royal icing and whatever you’d like to raid from Angela’s sprinkle collection.

For the wreaths you’ll learn to pipe perfect circles to form your wreaths and you’ll take home a selection of adorable Italian Macarons in a selection of flavors to share with your family and friends. You’ll make a delicious Chocolate Ganache Filling in your choice of flavors plus, Mary will have a batch of Italian Meringue Buttercream ready for you to flavor so you can go home with a variety of flavors… you can even go seasonal with Eggnog, Gingerbread or Apple Pie flavors (or choose one of our Boozy Liquor flavors…dozens of other non alcoholic flavor options available too!) Plus, Mary will show you how to decorate your wreaths to perfection with royal icing, elegant sprinkles and luster dust.

*Italian Macarons are similar to their better known cousin the French Macaron, but are more robust and versatile-allowing you to make multiple colors from the same batch and easier for piping shapes. The methods are very similar, so if you’ve made French Macarons before, you’ll be creating multi color adorable macarons in no time!

Join Angela McEllin for an enchanting afternoon making and decorating these spectacular Dragon’s Lair Hot Chocolate Bombs! You’ll learn to make, decorate and fill handmade hot chocolate bombs (and a treasure chest!) and then choose from a variety of delicious fillings* to delight your little monsters with this Halloween!

You’ll also learn how to use modeling chocolate in molds and use decorator’s tools, an airbrush and edible luster dusts to add mystical elements to embellish your designs. In the interest of time, we’ll have the small and large egg shells already made and ready to fill and decorate. You’ll make the treasure chest and the full size hot chocolate bomb shells.

You’ll go home with your masterpieces (six full size hot chocolate bombs, three large eggs, three small eggs and a treasure chest) full instructions, all the recipes and TWO chocolate molds- one for the treasure chest and one three piece mold for making the hot chocolate bombs.
