The Lambeth Method (also known as "overpiping" is a classic, ornate piping style that's often reserved for special occasions) is a cake decorating technique that normally uses royal icing to create intricate layers of scrolls, details, and garlands over a royal icing covered fruitcake, however, in this class, Lisa He will teach you how to use her special blend of buttercream to create this beautiful 2 tier Triple Vanilla Sponge Cake.
As today is all about the decoration, we’ll have freshly baked triple vanilla sponge cakes ready and waiting for you to level, tort and crumb coat before covering them with the beautiful Lambeth Method designs. You’ll have your choice of colors and flavors to customise your buttercream. And, once decorated, you’ll learn how to dowel and safely stack your cakes.

Join Brian Knowles as he teaches you how to make two of his favorite (and easiest) breakfast items using sourdough discard.
First he will teach you how to make what may be the easiest bread ever-English muffin bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the corn meal giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.
Just slap all the ingredients in a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!
While the bread dough is proofing we’ll make a FAB favorite snack-crunchy cinnamon toast cereal. These aren’t just for breakfast! We eat them all day long as a sweet snack without the bowl of milk. With the help of a food processor, these are so easy to make and you will be munching on them in no time. They are buttery, sweet, flaky and crunchy all at the same time, satisfying more than one craving.
You will not believe how easy it is to make these two things. We will even have time to make a quick fruit jam to go on top of our English muffin bread.

Students will prepare a classic Beef Stroganoff by first slicing tender beef into thin strips and searing it to develop rich flavor. Afterwards create a creamy sauce by sautéing onions and mushrooms, adding a touch of garlic, and deglazing the pan with broth and sour cream. The dish will be served with rice.

We’ll start by creating a batch of Mini Profiteroles (Choux buns) filled with a delicious Vanilla Bean* Semifreddo and topped with a luxurious Chocolate Sauce. While your choux are baking, you’ll create Finger Sandwiches with a variety of fillings. During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.
We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.
While that loaf does its second rise, you’ll learn how to add inclusions and create beautiful decorative shaping and scoring stunning designs.

Today’s class will be centered around a delicious and hearty meal inspired by the book A Honey for the Beekeeper, written by Nina Crespo. We will start by preparing Cowboy Butter, a flavorful and creamy compound butter that's perfect for steaks, vegetables, and even pasta. Cowboy butter is made with a mix of ingredients like garlic, fresh herbs, lemon juice, and, of course, a touch of spice, bringing an irresistible kick to any dish. It's a perfect accompaniment to our next dishes, Pasta and Steak.
We’ll begin by making the Cowboy Butter, which includes ingredients like garlic, parsley, chives, paprika, lemon juice, Dijon mustard, and a bit of cayenne pepper for heat. This rich butter will be the key to taking our steak to the next level and adding extra flavor to our pasta.
Afterward, we’ll move on to the Pasta, where we’ll incorporate the cowboy butter, letting its creamy texture and flavors soak into the noodles. We’ll top it with freshly grated Parmesan to add a savory, salty finish.
Next, we’ll prepare the Steak, searing it to perfection and finishing it off with a generous dollop of our homemade cowboy butter, allowing the flavors to melt into the steak, creating a mouthwatering experience.

Isomalt is a sugar-free hard candy, that we can heat to pour into molds, pull to sculpt with, or use for blown sugar techniques. It is slightly sweet, and holds up better than sugar to humid environments.

Join Chocolatier Mary Storey for an enchanting evening making and decorating two boxes of assorted Mother’s Day Chocolates. You’ll start by dipping squares of Mary’s divine Bourbon Caramel Ganache in Milk. White and Dark Callebaut Belgian Chocolate and while they are setting, you’ll go on to make a box filled with gorgeous decorated Chocolate Mendiants. Once your chocolates are set, it’s on to the fun bit…decorating! Mary will show you how to create the beautiful watercolor effects, hand paint using edible luster dusts, create tiny embellishments and of course add contrasting chocolate drizzles!
For the Chocolate Mendiants (photos to follow), you’ll have a variety of toppings to choose from including dried fruit, nuts and sprinkles and of course you can add your own flair by creating beautiful tiny embellishments.

Join Pastry Chef Mary Storey for a tasty evening making Almond and Maple Pecan Brioche Bear Claws. You’ll start by making your two fillings and then shape and roll the ready made dough and shape your bear claws. While your pasties are baking you’ll make your glazes and a fresh batch of Brioche Dough to take home!

Lemon Meringue Swiss Rolls
When life gives you lemons, come along and join Pastry Chef Keri Cossette to make TWO delicious Swiss Rolls to add to your dessert repertoire. You’ll learn how to make a delicate lemon infused chiffon sponge cake. While the cake is baking, you will learn how to make light as a feather meringue, classic lemon curd & mascarpone mousse filling. After the cake has cooled, Chef Keri will then teach you all the tricks you’ll need to roll up the perfect Swiss roll, pipe your beautiful meringue- plus, you’ll get to play with the chef’s torch to toast your meringues!

For the sweet tart you will make a batch of rich Caramel Sauce to go on the bottom of the tart shell and make Chocolate Lava Cake batter to go on top. For the savory tart you will learn how to make a Smokey Bacon Spinach Ricotta Filling. You'll learn all the secrets to rolling out your dough and forming & filling your tart crusts. Pies are defined by their crusts and in this class you’ll learn techniques to bake the perfect flaky, crisp pastry crust.
