Mary Storey will unravel the secrets to the creating a selection of fondant centers, her delicious peanut butter filling (and caramel.) You’ll also create a tray of Melting Moments in your choice of Hazelnut Praline, Peppermint or Coconut. Plus, you’ll learn how to cast, fill and decorate a set of eggs, use a 3 part mold (yours to bring home) and cast a pair of SOLID Bunnies in either white, dark or milk chocolate.

Pane di Pasqua is a traditional Italian Easter bread. This slightly sweet and puffy bread is braided into a simple ring decorated with dyed eggs. This bread will be a beautiful showstopper on your Easter table.
You can make this recipe into six smaller bread loaves, or divide the loaf in half and make two larger loaves. Twisting the dough into a ring-shape allows it to nestle six colorful eggs that you dye yourself in your colors of choice, making you feel like a kid again.
Multicolored sprinkles are optional but they add a fun and colorful twist to this traditional bread.

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.
We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.
While that loaf does its second rise, you’ll learn how to add inclusions and create beautiful decorative shaping and scoring stunning designs.

Mexican Street Corn Waffles with a Roasted Salsa Verde

For a Mexican inspired brunch, Brian takes a Mexican street food favorite and turns it into a waffle. Sweet yellow corn, crumbly tangy queso fresco and fresh jalapeños are mixed into a slightly sweet waffle. These savory waffles are then topped with an egg cooked to your preference, and then drizzled with your freshly made roasted salsa verde, more cheese, more cilantro, more corn and maybe avocado (if they are ripe).
You’ll start the class by making a roasted salsa verde which consists of tomatillos, jalapeños, onions, garlic, limes and cilantro. The level of spiciness is up to you-if you like it spicy, leave the seeds and ribs in your jalapeños, if not, take them out. You’ll then move on to making our waffle batter, again adjusting the level of spiciness to your liking. After the veggies come out of the oven, we’ll blend up our salsa ingredients, cook our waffles and bring all the elements together to create a fun and (possibly) spicy brunch dish.
Who knows there might even be a Mexican inspired mimosa to enjoy with our Mexican Street Corn Waffles.

4 Day Carved Cake Class- Baby Dragon INTENSIVE!

Course dates will be confirmed 6 weeks in advance or when all students have enrolled. A $500 refundable** deposit is required to reserve your place (Full course fee is $1,500.00 and balance is due by March 6, 2025.)
Discover your creative flair and learn a variety of skills to take your decorating skills to the next level. Students will be supplied with the Carving/Modelling Tool Kit (see full list below) which will be theirs to keep at the end of the course.
As this is an intensive course, space is limited to 8 students.
Are there specific requirements for joining?
This course is suited to bakers/decorators wishing to improve their modeling, carving and sugar-craft skills.
Course Aims: Learn the skills needed to professionally carve, cover and embellish realistic looking 3D cakes using different techniques of buttercream, ganache, fondant, modeling chocolate, sugar florist paste, isomalt, chocolate leather and modelling paste. Skills you will learn include:
Stacking, Carving and Shaping cakes to create 3D cakes
Scaling components from images to create correctly proportioned elements (and reusable templates)
Creating and using:
Handmade Fondant
Chocolate Modelling Fondant
Modelling Chocolate
Chocolate Leather
Modeling Paste
Edible Mixed Media Paper
Edible Moss Cake
Tempering and casting chocolate
Using an airbrush to color and highlight your designs
Using various carving tools and the Zeoto Pen Heat Decorating Tool to carve elements including the chocolate egg
Using texture mats, tools and hand modelling to create realistic textures
Creating custom modelling tools for this and future projects
Creating stable structures, dowling, stacking and packaging for successful transportation
Safely using LED lights to enhance design elements
Pulling design elements together successfully including dusting, painting, and coloring;
Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for your course project)
**If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.
Balance of course fee is due four weeks (March 6th, 2025) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all eight spots (we require a minimum of 5 students) are reserved, whichever comes first to confirm booking. Please do not book flights until your spot has been confirmed.

Alternatively, gift certificates can also be used for the deposit or to pay off the balance- many of our students avail of this option as friends and family purchase gift certificates for holidays and birthdays.

Please note: This is a LARGE cake- the board is 20” square, the cake at its highest point is 16” and it weighs over 50lbs/23Kilos, so may be difficult (but not impossible) to transport back if you are flying.
Many students already own many of the tools used for carved cakes, we will discuss any additional items we’d recommend in addition to the carving/modelling tool kit listed below..
A 10% discount is provided for any additional tools, cutters, equipment that you may wish to purchase on the course.

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!

Join Sidney Galpern of Simi Cakes for this fantastic foray into all things Isomalt! In this class you will learn the fundamentals of working with isomalt to create a beautiful undersea isomalt sculpture. (You have the choice of either one large or two smaller sculptures for Dynamic Duos.)
Isomalt is a sugar-free hard candy, that we can heat to pour into molds, pull to sculpt with, or use for blown sugar techniques. It is slightly sweet, and holds up better than sugar to humid environments.
We will be covering a wide variety of topics in this hands-on workshop, including casting into molds, pulling and hand sculpting, blown isomalt bubbles, abstract isomalt techniques and accents, structure, stability, safety, coloring, flavoring, painting, impressioning, overcoming humidity, and MORE as each student assembles a unique under the sea themed sculpture. You'll start by making your sweet filling (your choice of apple or cherry...with a myriad of other add ins like nuts, booze soaked dried fruit, marzipan...the list goes on!) and while that's cooling you'll make Rory's oh so versatile pie dough. If you’ve ever visited Rome, you will hopefully have experienced the exquisite cream filled breakfast pastry that is the Maritozzo con la Panna (Maritozzi Buns.)
Maritozzi are fragrant, sweet dough buns flavored with orange zest and cardamon, sliced in half and filled with smooth, fresh whipped cream. They are a staple in Rome’s pasticcerie, and commonly found during the breakfast hours in coffee bars around the Eternal City.
Join Mary Storey for a wonderful evening recreating these amazing buns. You’ll start by dividing and learning to shape a batch of dough that we’ve prepared for you. While your buns are rising, you’ll make a batch of dough to bring home so you can enjoy even more Marizozzi whenever you like. Next, we’ll bake the buns, and while they are in the oven you’ll make the delicious syrup that the buns are soaked in immediately out of the oven. Finally, you’ll create your cream filling- you can go traditional and use fresh Chantilly Cream (or if you are a bit daring, try Mary’s delicious Mascarpone Cream) and split and fill your buns!
