During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! As it’s Mother’s Day we’re throwing an Afternoon Tea Party with all Mum’s favorites. Join Rory and Angela McEllin as we recreate some of the most delicious treats your Mum really wants to nibble on.
We’ll start by creating a batch of Mini Profiteroles (Choux buns) filled with a delicious Vanilla Bean* Semifreddo and topped with a luxurious Chocolate Sauce. While your choux are baking, you’ll create Finger Sandwiches with a variety of fillings. Your 3 tier tea tray will have Rory’s Sausage Rolls and freshly baked Traditional Irish Scones as well as a Special Dessert Angela has designed just for Mum. In addition to a glass of champagne on arrival, you’ll have your pick of a selection of delicious teas to choose from. So dig out your fancy hats and come out for a celebration of all things Mum! We’ll be covering basics including knife skills; food hygiene and kitchen safety; fruit, vegetable and meat preparation; preparing from scratch quick and yeast breads, classic pie dough, handmade pasta, a selection of sauces and homemade custard. Students will bring home everything they make plus all the recipes to recreate everything at home. Plus, each student will be taught how to properly clean up after themselves - you’re welcome parents and future housemates!

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!
Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course. Puff Pastry: Napoleons, Palmiers, Fruit Turnovers and Roses- Make Puff Pastry from scratch and learn four different recipes and techniques using one of the most versatile tools in any pastry chef’s arsenal.
Chocolate Skills- Learn to use Chocolate Transfer Sheets, to temper chocolate perfectly and to create a variety of decorations and embellishments.
Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.
Suitable for ages 12 and older - no exceptions. Flour, NUTS, Eggs and Dairy are used during this camp. If your child has any food allergies, food intolerances or aversions, please contact us before signing up.

Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and cake truffles using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:
Baking success principles including weighing, measuring, scaling, converting and costing recipes
How to bake, level, torte, dam, fill and cover a sponge cake
Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)
Using roll out and paneling methods for covering regular and double barrel cakes to obtain sharp edges and cover with fondant
Creating Cake Lace from scratch, using commercial mixes and alternative methods
Dowling, stacking and packaging for successful transportation
Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes
Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;
Pulling design elements together successfully including dusting, painting, and coloring;
Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)
Marketing, advertising, and finding the right clients
Costing, pricing, and profitability- how to get paid what you deserve!
Setting up for success- contracts, deposits, insurance, licenses, etc.

There’s no need to be intimidated by bread! In this hands-on 101 class, Angela McEllin will teach you the basics of making delicious fresh bread at home. She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Angela will teach you to make a compound herb butter too!
You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home. Beef Bourguignon is such a wonderful dish with tender, fall apart chunks of beef simmered in a rich, red wine gravy flavored with a selection of fresh herbs and vegetables. The bread bowl recipe can be adapted to smaller dinner rolls or even baked in a loaf pan. And finally, the Fruit Crisp recipe is so versatile and quick you’ll want to use it all year ‘round!

Okay, so it may not be the prettiest cake, but it certainly lives up to its name! Most Norwegians refer to Kvæfjord cake (Kvæfjordkake) as simply ‘verdens beste’, or the world’s best cake- in 2002 they even voted it as the national cake of Norway.

Kvæfjord is one of the most beautiful parts of Norway, nestled between the stunning Vesterålen islands and the town of Harstad. Kvæfjordkake got its name from the two sisters from Kvæfjord who first made this cake at Café Alliance in Harstad in the 1930s.
Although it may sound like a bit of a boast, the entire FAB team agrees…even Sebastian!
*The original Verdens Beste is a meringue topped Norwegian sponge cake filled with a velvety vanilla cream. However, Angela had some fresh raspberries on hand and had just made a delicious homemade Raspberry Conserve, so… it just needed to be done. Of course, you can do the original five layer version if you prefer, but really, why would you want to?

Join us for this festive Buche de Noelle class and learn how simple it is to create this traditional French Yule time dessert.
You'll discover all the secrets to preparing and rolling the sponge - without breaking! - and creating the adorable marzipan mushrooms and sugar-paste leaves and berries that adorn the completed log.

Perfectly spiced Homemade Eggnog is so versatile to make, you’ll likely never buy the store bought stuff again. You’ll make a full batch of Eggnog and use a little to make the Eggnog Custard to create your luscious Brioche Eggnog Bread Pudding the perfect make ahead recipe to round out a holiday meal or the star of a frosty* winter morning brunch when you have a house full of guests! Choose from Chocolate Chips, Pecans, or tart Cranberries (or any combination you like) to fill your pudding- or go au natural and leave the eggnog flavor to shine all by itself. While your Pudding is baking, you’ll create a sumptuous Warm Whiskey Caramel Sauce to drizzle over your finished pudding.
