Pane di Pasqua is a traditional Italian Easter bread. This slightly sweet  and puffy bread is braided into a simple ring decorated with dyed eggs. This bread will be a beautiful showstopper on your Easter table.

You can make this recipe into six smaller bread loaves, or divide the loaf in half and make two larger loaves. Twisting the dough into a ring-shape allows it to nestle six colorful eggs that you dye yourself in your colors of choice, making you feel like a kid again. 

Multicolored sprinkles are optional but they add a fun and colorful twist to this traditional bread.

Mexican Street Corn Waffles with a Roasted Salsa Verde

For a Mexican inspired brunch, Brian takes a Mexican street food favorite and turns it into a waffle. Sweet yellow corn, crumbly tangy queso fresco and fresh jalapeños are mixed into a slightly sweet waffle. These savory waffles are then topped with an egg cooked to your preference, and then drizzled with your freshly made roasted salsa verde, more cheese, more cilantro, more corn and maybe avocado (if they are ripe). 

You’ll start the class by making a roasted salsa verde which consists of tomatillos, jalapeños, onions, garlic, limes and cilantro. The level of spiciness is up to you-if you like it spicy, leave the seeds and ribs in your jalapeños, if not, take them out. You’ll then move on to making our waffle batter, again adjusting the level of spiciness to your liking. After the veggies come out of the oven, we’ll blend up our salsa ingredients, cook our waffles and bring all the elements together to create a fun and (possibly) spicy brunch dish.

Who knows there might even be a Mexican inspired mimosa to enjoy with our Mexican Street Corn Waffles.

Join Brian Knowles as he teaches you how to make two of his favorite (and easiest) breakfast items using sourdough discard. 

First he will teach you how to make what may be the easiest bread ever-English muffin bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the corn meal giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.

Just slap all the ingredients in a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!

While the bread dough is proofing we’ll make a FAB favorite snack-crunchy cinnamon toast cereal. These aren’t just for breakfast! We eat them all day long as a sweet snack without the bowl of milk. With the help of a food processor, these are so easy to make and you will be munching on them in no time. They are buttery, sweet, flaky and crunchy all at the same time, satisfying more than one craving.

You will not believe how easy it is to make these two things. We will even have time to make a quick fruit jam to go on top of our English muffin bread.

Home Steading 101 - Make Your Own Condiments

To kick off our Home Steading 101 classes, join Brian Knowles as he shows you how to make some of his favorite burger condiments. Not only can you adapt them to your taste (less sugar, more spice etc.), but they don’t have all of those extra ingredients you can’t pronounce. Plus they are wallet friendly.

We’ll start off the evening by quick pickling cucumbers, also known as Quickles and then tossing red onions in hot pickling brine. Brian likes to add crushed chili pepper flakes to the cucumbers and oregano to his Pickled Red Onions.

Moving along, we’ll then cook our Ketchup or is it catsup? Which ever way you spell it, according to DoorDash it is the most popular burger condiment. Like it spicier? Add some hot sauce. Want it less sweet? Don’t add as much sweetener. 

Mayonnaise is the second most popular burger condiment. You won’t believe how easy it is to make from scratch. Just six ingredients and all you can pronounce all in one container. You’ll never buy it in a store again! 

Brian is saving his favorite burger condiment for last. Bacon Jam! Brian has been making this recipe for years ever since he tested it for his friends cookbook back in 2013.  Are you a chunky or a smooth person? Either way its delicious. Leave it chunky for some texture or take an immersion blender to it for a smooth and spreadable jam.

You might be wondering what is the third most popular condiment? That would be Yellow Mustard. Although we won’t have time to make this classic condiment in class (it takes well over an hour), some will be provided as will the recipe so you can make it at home. It’s also the perfect accompaniment for Mary Storeys pretzels. 

Of course after making all these condiments you’ll want to try them ASAP so you’ll be able to make your own burger patty on a home made potato roll that Brian made earlier in the day.

Join Brian Knowles for a fun morning exploring the (if not extinct, very elusive at least in Florida) Bialy, originally from the city of Białystok in Poland, is a traditional bread roll in Polish Ashkenazi Jewish cuisine. Bialys are often likened to bagels, but aside from both being made with yeasted dough, they are a two distinctly different types of roll; bialys aren’t boiled like bagels before baking and rather than a hole in the center, the top of bialys have an indentation filled with a caramelized onion-poppy seed-breadcrumb topping that’s irresistible. Once baked, you can stuff your bialys with whatever you like- cream cheese, smoked salmon (or lox), poached eggs, salad fixings, deli meats and cheeses…the options are endless.

As this is a Brunch class, we’ll have several filling options available for you to choose from and of course mimosas too. Best of all, you’ll have a batch of bialys to bring home (they freeze beautifully!) to share -or not- with your friends and family.

During this FULL DAY Sourdough DISCARD 101 class with Brian Knowles we’ll work our way through several recipes (all of which you’ll bring home with you.)

  • Sweet or Savory Sourdough Discard Pull Apart Bread

  • Sweet and Savory Sourdough Discard Waffles

  • Sourdough Discard Chocolate Crinkle Cookies

    We’ll start the morning learning how to make Sweet or Savory Sourdough Discard Pull Apart Bread (the choice is yours…pictured above are the focaccia and cinnamon sugar varieties, but your imagination is the limit flavor wise!) While that dough rises, you’ll start your own batch of Sourdough Waffle Batter…which can be divided into your choice of flavors (we particularly liked the Cheddar and Bacon and the Chocolate Chip ones, but even the plain ones disappeared in record speed with their slight tang and crispy deliciousness.) Rounding off the day, you’ll make, bake and fill the most amazing Sourdough Discard Chocolate Crinkle Cookies…they’re so good, they DISAPPEARED in record speed!

There will be several sourdough discard nibbles to enjoy while you’re making your own goodies!

Brian Knowles has been baking up a storm again…this time he’ll be teaching you how to recreate a recipe perfect for your next brunch gathering- with the added bonus of a seafaring link: Khachapuri!

Khachapuri is a traditional Georgian bread typically served for breakfast or lunch. This soft, cheese-filled bread is the national dish of the country of Georgia. Part of its charm is that it varies by region; the open-faced Adjaruli Khachapuri version is filled with cheese and herbs, with an egg nestled on top.  It is quite literally a cheese boat or canoe -shaped to represent the sailors and boat builders along the Black Sea.

You’ll learn to shape and stuff the traditional boat shaped breads and the secret to having a perfectly runny egg yolk every time (if that’s not your thing, you can certainly opt for a less runny option.) You’ll also make a batch of dough to bring with you to recreate this wonderful bread at home. Brian will also teach you the secrets to his delicious Lemon Vinaigrette Dressing to enjoy over your Summer Salad. And no brunch class would be complete without our freshly made mimosas!

So many of you have requested this class after you've enjoyed Brian's Focaccia Pizza for lunch at one of our full day classes, we've finally picked a date! We'll have a batch of dough ready for you and Brian will teach you how to make the dough (you'll go home with your own batch of dough so you can make more focaccia pizza's over the coming days.) While your dough is resting, Brian will teach you his signature sauce (the one he's been perfecting for the last couple of years) and the secret technique he uses when baking the pizzas to get that rich depth of flavor. Once your sauce is ready, you'll have a smörgåsbord of toppings to choose from to customize your pizzas.  During the class you’ll learn about the variety of sauces you can use to mix it up a bit at home!

We’ll finish the class with FABulous Fruit Filled Mini Pavlovas!

Join Brian Knowles - yes our very own Brian! for a fun afternoon making two varieties of Brioche Twists- you can choose from a selection of sweet and savory options. Our classic one is the Lemon & White Chocolate variety, but you can mix it up with Orange & Dark Chocolate, Maple Pecan (soooo good!), Chocolate Hazelnut Nutella or go savory with Asiago, Garlic & Rosemary or Sun Dried Tomato & Basil spice it up with a Parmesan & Cayenne mix…we have loads of herbs to choose from- your imagination is the only limit!

These sweet (or savory), buttery Brioche Twists mixed with your choice of fillings that will slightly melt in the twists as they bake, will become your new favorite. They are delicious fresh out of the oven, but top the twists with a complimentary Sweet Glaze or for the savory options choose to brush with Garlic Butter, and you will have a new favorite flavor combination!
