There’s no need to be intimidated by bread! In this hands-on 101 class, Mary Storey will teach you the basics of making delicious fresh bread at home. She’ll demystify yeast, flours, flavors and show you simple kneading and scoring techniques that are easily adaptable for different types of doughs. While your breads are baking Mary will teach you to make a compound herb butter too!

You’ll learn three different shaping techniques (loaves, rolls and braids) and bring home TWO fresh baked loaves, compound herb butter as well as a batch of dough to bake at home. Best of all, you’ll get to sample your teacher’s bread and take home your still warm loaves to share with family and friends.

Greek Cooking Class with Marianna Faure: Moussaka & More

Join beloved local home cook Marianna Faure as she shares her cherished Greek family recipe for Moussaka, a classic dish full of rich, savory flavors. Layered with tender eggplant, hearty potatoes, spiced meat sauce, and topped with a creamy, cheesy béchamel, this dish is comfort food at its finest—and one you'll be proud to recreate at home.

You’ll also prepare Horiatiki, a traditional Greek village salad made with fresh, vibrant ingredients. It’s light, full of flavor, and the perfect complement to any Mediterranean meal.

Once you've assembled your Moussaka, you'll have the choice to bake it during the class or take it home to bake fresh for your family. While your Moussaka bakes, enjoy a pre-made version by Marianna, served alongside your freshly made Horiatiki.

To end the evening on a sweet note, you'll be treated to a FABulous Mediterranean-inspired dessert—because no Greek gathering is complete without something deliciously sweet!

Join Brian Knowles as he teaches you his updated version of the classic German Bienenstich (Bee Sting) Cake. Brian’s Stinging Bee Cake is a great addition to your Oktoberfest celebration.

  • Moist Honey Cake

  • Stabilized Diplomat Cream

  • Raspberry Jam

  • Soft Caramel

Although the traditional bee sting cake is made with a sweet yeast dough, Brian has chosen to make his with a moist honey cake. The cake is sliced in half and filled with a stabilized diplomat cream.  Diplomat cream is a vanilla pastry cream that is then lightened up with some sweetened whipped cream. Gelatin is added to the whipped cream to help stabilize the filling. Raspberry jam, not found in the traditional bee sting cake, is spread between the layers. The jam helps cut through the richness of the diplomat cream and the honey cake. Brian will teach you how to make a soft caramel to spread on top of your cake which then has toasted almond slivers sprinkled on top.

Brian’s Stinging Bee Cake is sure to be the star of any celebration or meal, not just Oktoberfest. This cake holds up well for three or four days (if it lasts that long) and gets better with age. Leftovers (if there are any) go well with a cup of tea for an afternoon pick me up.

Join Brian Knowles as he walks you through making your very own version of Korean Kimchi (which you’ll take home to enjoy with family and friends) with a few simple ingredients. Kimchi can be eaten on its own as a healthy snack or incorporated into many tasty dishes, such as fried rice, and dumplings to name a few.

What you’ll make in class:

  • Korean Kimchi from Scratch (which you will bring home to complete the fermentation process)

  • Kimchi Pancakes (made with Brian’s fermented Kimchi)

In class, while your cabbage goes through it first stage of fermentation, you’ll make and enjoy Brian’s favorite recipe-Kimchi Pancakes, with kimchi that has been fermented ahead of time for you.

There are more versions of kimchi than you can count, but Brian will be teaching you his favorite that is easy to make and slowly ferments in the fridge which is perfect for hot and humid weather.

Traditional kimchi is made up of napa cabbage, various vegetables, aromatics and a few other ingredients, including the ever important gochugaru (Korean chili powder).

Without sounding like a science teacher, kimchi is made by lacto-fermentation, the same process that creates sauerkraut and traditional dill pickles. In the first stage, the cabbage is soaked in a salty brine that kills off harmful bacteria. The second stage is where lactobacillus bacteria (the good guys) convert sugars into lactic acid, which preserves the vegetables and gives them that wonderful, tangy flavor.

After you eat your kimchi pancakes, you’ll finish up your own kimchi which you will take home and can enjoy the next day or in two weeks. How long you let it ferment is up to you.

Kimchi is very popular due to its range of health benefits from probiotics, vitamins and antioxidants, which are said help support your digestive and immune systems.

Making your own kimchi can sound intimidating, but with a few simple ingredients, you too will be able to make it at home to suit your tastes.

Join Louisiana native-Suzy Fleming Leonard (retired food and dining editor at FLORIDA TODAY) for a fragrant evening recreating the official dish of Louisiana: Gumbo!

In this class, you’ll learn how to make a chicken, sausage and okra gumbo. Master this recipe, then adapt it to feature turkey, seafood or almost any leftover protein.

In this class you will:

  • Chop and prepare the Cajun Trinity of onion, bell pepper and celery

  • Create a dark brown roux from butter and flour

  • Make a zingy rémoulade dressing for a crisp green salad

  • Make your own Cajun seasoning, tailored to your personal taste

While the gumbo flavors marry in the cooking pot, we’ll give a brief tutorial on the ABCs of roux, from a blond roux that adds flavor and heft to classic Cajun étouffée to the dangerously dark roux adds a depth and mystery to your gumbo.

We will also teach you a little history of gumbo, the differences between various gumbos and how to customize the dish to your liking. Whether you’re looking for a delicious way to use up leftover Thanksgiving turkey or you need to feed a crowd, gumbo is the perfect dish to warm up a cool fall day. There’s a reason this is the official dish of Louisiana.

Curious about sourdough? New to sourdough? Struggling with sourdough?

During this FULL DAY hands-on class, we’ll work our way through several recipes throughout the day (all of which you’ll bring home with you) including Sourdough Discard Herb Crackers, and Sourdough Fougasse!  

You’ll start the morning making a Same Day Sourdough Sandwich Loaf for when you want bread the same day. Next you’ll learn the importance of proper scoring and then practice on your own unbaked loaf that has been prepared for you. While that loaf bakes, you’ll start your own Sourdough Boule to bring home, going through all the stretching and folding throughout the day! 

Throughout the day Brian will share some tips that help him bake sourdough at home. He’ll share starter ratios and desired dough temperature. Two things that have helped him to bake sourdough on his schedule, not the other way around. 

While we’re waiting for all our recipes to rise, FAB will share some of its very own starter with you to take home and continue your sourdough journey. Brian will also share some tips and tricks for maintaining your starter at home, before sending you on your way with your arms full of sourdough bread.

What you’ll make:

  • Cinnamon Coffee Cake: Learn to make a rich, cinnamon swirl coffee cake, with the option to add walnuts or pecans. Each student will create their own ¼ sheet (9.5" x 15") cake, perfect for sharing or enjoying on your own.

  • Magdalenas: These are scone-like, raisin-infused pastries that are the Mexican version of the French Madeleine. We’ll teach you how to shape and bake them, and you can add your choice of sprinkles or nuts on top for extra flavor and texture.

Course dates will be confirmed 6 weeks in advance or when all students have enrolled. A $500 refundable* deposit (Full course fee is $3,000.00 and balance is due by July 24, 2025) is required to reserve your place. Due to the intense nature of this course, we are limiting space to only 6 students to ensure each student receives individual, hands-on attention. A project outline questionnaire will be sent out for completion and return prior to course starting.

Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.

Are there specific requirements for joining?

This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills.

Course Aims

Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and cake truffles using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:

  • Baking success principles including weighing, measuring, scaling, converting and costing recipes

  • How to bake, level, torte, dam, fill and cover a sponge cake

  • Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)

  • Using roll out and paneling methods for covering regular and double barrel cakes to obtain sharp edges and cover with fondant

  • Creating Cake Lace from scratch, using commercial mixes and alternative methods

  • Dowling, stacking and packaging for successful transportation

  • Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes

  • Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;

  • Pulling design elements together successfully including dusting, painting, and coloring;

  • Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)

  • Marketing, advertising, and finding the right clients

  • Costing, pricing, and profitability- how to get paid what you deserve!

  • Setting up for success- contracts, deposits, insurance, licenses, etc.

Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.

*If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.

Balance of course fee is due four weeks (July 24th, 2025) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all six spots are reserved, whichever comes first to confirm booking. Please do not book flights until your spot has been confirmed.

This immersive, hands-on class will guide you through the beautiful, patient process of sourdough baking using traditional Italian methods, with a special focus on pane made from Lievito Madre—a natural sourdough starter that’s been lovingly nurtured for years.

We’ll begin by baking a fully fermented loaf, already prepared the night before, so you can get the full sensory experience of scoring, baking, and tasting fresh sourdough right away.

Then, together, we’ll create a new dough from scratch using Lievito Madre. You’ll learn how to:

  • Practice proper folding techniques

Spend the day with Brian Knowles as he takes you on a journey discovering sweeet and savory adventures for you sourdough discard.

We’ll start the day by making a discard version of that ever so popular Lemon Blueberry Loaf Cake found at a popular membership warehouse store. This loaf cake is so moist and tender that very bite just melts in your mouth. Each slice is loaded with fresh blueberries and the batter is made with the zest and juice of fresh lemons (no artificial flavors here)! Topped with a sweet layer of crumble and a drizzle of lemon icing, this blueberry loaf is just as tasty (if not more) as it looks.

Next up Brian will teach how to make the Quick Sourdough Discard Rolls so many of you have enjoyed with soup at some recent all day classes. These quick easy and tasty rolls are perfect for holidays and can be switched up by topping with flaky salt, sesame or poppy seeds. These rolls only need to rise once so are great for a last minute roll for dinner. 

While our rolls are rising we will then make our Sourdough Discard Goldfish Cracker dough. These crackers come together quickly in a food processor and then chilled for a bit. They are so good that even Brians dogs gobble them up. These crackers never last long, so you’ll be making these quite often. Once the dough is made you can store it in your fridge for up to a week and easily bake off a batch when the craving strikes. We’ll bake these off when we have time and hopefully there will be some leftover for you to take home. 

We’ll end the day making Sourdough Discard Cosmic Brownies. These rich and fudgy brownies topped with a chocolate icing and sprinkles of your choice will bring you right back to your childhood.  What makes these brownies unique is that the icing is made with hot water and spread on the just out of the oven brownies and topped with your choice of sprinkles. We like them best chilled but wouldn’t turn down one down if it wasn’t. 

As this is a Chef Night/Date Night, you are welcome to BYOB (please drink responsibly!)

Who doesn’t love a warm buttermilk biscuit topped with eggs, meat and cheese in the middle? Are mornings crazy in your house trying to get everyone out the door? Have no fear, Brian Knowles will teach you how to make mornings easier and tastier with his Buttermilk Biscuit Breakfast Sandwiches that can go from freezer to the table in two minutes. 

Brian will teach you how to make light and flaky buttermilk biscuits two ways. You’ll start your biscuit journey by making a savory biscuit for your breakfast sandwiches. Once they are cool you’ll build your biscuit sandwiches with your choice of breakfast meats and cheeses. You’ll have the opportunity to enjoy one of your buttermilk biscuits before he shows you how to wrap them up for storing in the freezer and he’ll even share his tips on heating them up in the microwave.

Don’t worry about having to fry up a bunch of eggs individually because Brian will show his time saving secret of baking scrambled eggs in a sheet pan. You’ll cut your eggs using the same cutter as your biscuits, so you’ll get egg and biscuit in every bite!

While your savory biscuits are in the oven, Brian will teach you how to turn the same buttermilk biscuit recipe into a sweet one with a few tweaks to the recipe. There is no better way to end the class than by enjoying  the fruits of your labor by taking one of your sweet biscuits and topping it with macerated strawberries and a rich Chantilly cream.

Straight from the pages of Matcha Meets Macaron, this crowd-favorite cookie is a celebration of flavor and texture—chewy, buttery, creamy, and crisp in every bite!

Blind’ judging of final product(s) will be done by judge(s) that were not present during the bakes with a list of criteria to use, but overall decision lies with the judge(s.)

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!

Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Some prior baking experience is required for this course. If your camper has attended one of our previous summer camps, they should be skilled enough to attend, but if you are in doubt, please email info@fabbaker.com before booking.

  • Macarons with TWO fillings: Chocolate Ganache and Italian Meringue Buttercream both of which can be flavored to offer a variety of options. Macarons are one of the most sought after pastry items and have a reputation as being difficult…but not if you know the secrets! Mary Storey will teach you to pipe these adorable Starfish and Octopi!

  • Pastry Shop Cake- four layers of cake and a myriad of buttercream and drip options to choose from (Pictured is the Opps! Ice Cream Cake but you can go fruity, spicy, chocolatey…the choice is yours!)

  • Pâte à Choux Pastry: Cream Puffs and Profiteroles- Fill your profiteroles with your choice of cream patisserie flavors and create a stunning Choux Tower…best of all, you’ll go home with all the recipes so you can show off your cooking and baking prowess.

  • Puff Pastry: Napoleons, Palmiers, Fruit Turnovers and Roses- Make Puff Pastry from scratch and learn four different recipes and techniques using one of the most versatile tools in any pastry chef’s arsenal.

  • Chocolate Skills- Learn to use Chocolate Transfer Sheets, to temper chocolate perfectly and to create a variety of decorations and embellishments.

    Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.

We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.

While that loaf does its second rise, you’ll learn how to add inclusions and create beautiful decorative shaping and scoring stunning designs.

Finally, we’ll create the striking Garlic & Fresh Herb Sourdough Twist Bread (oh my- it is delicious!)

In this full-day, hands-on class you will make your own Gelato, Hot Fudge, and Salted Caramel Sauces and your own waffle cones and bowls. We make the gelato (Italian Ice Cream) the old-fashioned way- by hand so you can recreate the recipes at home without buying any special equipment. With hundreds of pure, natural extracts, spices, purees, and liquors and dozens of add-ins to choose from, your flavor combination options are limitless. You’ll go home with all your recipes, your full container of Gelato, a Box of Waffle Cones and Bowls, TWO Jars of Sauce- Hot Fudge and Salted Caramel and all the bragging rights that go along with your imprese impressionanti!

This class is suitable for the following Dynamic Duo* types:

YES: Parent/Grandparent & Child

YES: Couples (live in the same household)

YES: Friends (you will share all equipment/ingredients for 1 recipe/batch…we let you rock, paper, scissors if the recipe doesn’t divide equally.)

*What is a Dynamic Duo? It’s basically two buddies sharing the same workstation at no extra charge. You share all equipment and ingredients for a single batch of whatever we’re making that day. (Don’t worry, we won’t stick you with some random stranger- if you want to fly solo, you’ll have the station (and all the yummy food) all to yourself!)

We provide all ingredients, supplies, and tools required for use during each class. Best of all you get to take home whatever tasty treats you make - we provide all boxes/packaging.

Join Rory McEllin on this one day summer camp making Homestyle Pizza from Scratch you will learn to make homemade Pizza Dough and our versatile Tomato Sauce (can be used on pasta too!) AND the ultimate light, refreshing summer dessert Eton Mess!

We’ll have a batch of dough ready to shape, sauce, top and bake (you’ll have a huge selection of ingredients to customize your pizza) and learn the secrets to using a pizza peel and stone plus, go home with a fresh batch of pizza dough and your remaining tomato sauce so you can make delicious pizzas at home too- best of all, both the dough and sauce freeze beautifully!
