Just in time for Easter, join Mary Storey for a delightful half day class creating the classic Hot Cross Buns! In addition to learning a little of the history of these humble buns, you'll make your own dough from scratch (and choose your own fruit mix- go classic with raisins or currants or go a little rouge and throw in some of our other dried fruit...there is a whole pantry worth!) While your dough is rising you'll also create your own Lemon Curd to spread over your freshly baked buns or just eat with a spoon straight from the jar!

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! Mexican Street Corn Waffles with a Roasted Salsa Verde

For a Mexican inspired brunch, Brian takes a Mexican street food favorite and turns it into a waffle. Sweet yellow corn, crumbly tangy queso fresco and fresh jalapeños are mixed into a slightly sweet waffle. These savory waffles are then topped with an egg cooked to your preference, and then drizzled with your freshly made roasted salsa verde, more cheese, more cilantro, more corn and maybe avocado (if they are ripe).
You’ll start the class by making a roasted salsa verde which consists of tomatillos, jalapeños, onions, garlic, limes and cilantro. The level of spiciness is up to you-if you like it spicy, leave the seeds and ribs in your jalapeños, if not, take them out. You’ll then move on to making our waffle batter, again adjusting the level of spiciness to your liking. After the veggies come out of the oven, we’ll blend up our salsa ingredients, cook our waffles and bring all the elements together to create a fun and (possibly) spicy brunch dish.
Who knows there might even be a Mexican inspired mimosa to enjoy with our Mexican Street Corn Waffles.

Join Brian Knowles as he teaches you how to make two of his favorite (and easiest) breakfast items using sourdough discard.
First he will teach you how to make what may be the easiest bread ever-English muffin bread. No time to make a fresh loaf of bread or individual English muffins? This bread is the answer. The nooks and crannies are there, as is the corn meal giving the bread that nice crunch. Toast this up and top with some jam and butter and you won’t believe you made this yourself.
Just slap all the ingredients in a bowl, mix it up, pour it into a bread pan, let proof and then bake. No kneading needed!
While the bread dough is proofing we’ll make a FAB favorite snack-crunchy cinnamon toast cereal. These aren’t just for breakfast! We eat them all day long as a sweet snack without the bowl of milk. With the help of a food processor, these are so easy to make and you will be munching on them in no time. To kick off our Home Steading 101 classes, join Brian Knowles as he shows you how to make some of his favorite burger condiments. Not only can you adapt them to your taste (less sugar, more spice etc.), but they don’t have all of those extra ingredients you can’t pronounce. Plus they are wallet friendly.
We’ll start off the evening by quick pickling cucumbers, also known as Quickles and then tossing red onions in hot pickling brine. Brian likes to add crushed chili pepper flakes to the cucumbers and oregano to his Pickled Red Onions.
Moving along, we’ll then cook our Ketchup or is it catsup? Which ever way you spell it, according to DoorDash it is the most popular burger condiment. Like it spicier? Add some hot sauce. Want it less sweet? Don’t add as much sweetener.
Mayonnaise is the second most popular burger condiment. You won’t believe how easy it is to make from scratch. Just six ingredients and all you can pronounce all in one container. You’ll never buy it in a store again!
Brian is saving his favorite burger condiment for last. Bacon Jam! Brian has been making this recipe for years ever since he tested it for his friends cookbook back in 2013. Are you a chunky or a smooth person? Either way its delicious. Leave it chunky for some texture or take an immersion blender to it for a smooth and spreadable jam.
You might be wondering what is the third most popular condiment? That would be Yellow Mustard. Although we won’t have time to make this classic condiment in class (it takes well over an hour), some will be provided as will the recipe so you can make it at home. It’s also the perfect accompaniment for Mary Storeys pretzels.
Of course after making all these condiments you’ll want to try them ASAP so you’ll be able to make your own burger patty on a home made potato roll that Brian made earlier in the day.

During this FULL DAY Sourdough 102 Masterclass with Angela McEllin we’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Marble Rye Bread, Decorative Chocolate Sourdough Boule and Garlic & Fresh Herb Sourdough Twist Bread.
We’ll start the morning creating the stunning, tender Sourdough Marble Rye (with or without caraway seeds) in your choice of designs (Traditional Marble or Zebra Marble) with a batch of dough that’s been prepared for you.

Today’s class will be centered around a delicious and hearty meal inspired by the book A Honey for the Beekeeper, written by Nina Crespo. We will start by preparing Cowboy Butter, a flavorful and creamy compound butter that's perfect for steaks, vegetables, and even pasta. Cowboy butter is made with a mix of ingredients like garlic, fresh herbs, lemon juice, and, of course, a touch of spice, bringing an irresistible kick to any dish. It's a perfect accompaniment to our next dishes, Pasta and Steak.
We’ll begin by making the Cowboy Butter, which includes ingredients like garlic, parsley, chives, paprika, lemon juice, Dijon mustard, and a bit of cayenne pepper for heat. This rich butter will be the key to taking our steak to the next level and adding extra flavor to our pasta.
Afterward, we’ll move on to the Pasta, where we’ll incorporate the cowboy butter, letting its creamy texture and flavors soak into the noodles. We’ll top it with freshly grated Parmesan to add a savory, salty finish.
Next, we’ll prepare the Steak, searing it to perfection and finishing it off with a generous dollop of our homemade cowboy butter, allowing the flavors to melt into the steak, creating a mouthwatering experience.

Perfect for your budding Pastry Chefs (Age 12+), this 5 day immersive Patisserie Summer Camp is designed to introduce a wealth of techniques. Each recipe can be adapted in a hundred different ways and with our extensive selection of Organic and Natural Flavors and Extracts, each student can create their own unique masterpieces!
Each day will be devoted to mastering a selection of different techniques, so good listening skills, a moderate level of dexterity and an adequate attention span are necessary. Classes are held in a commercial kitchen and food safety and hygiene regulations must be adhered to at all times. Each student must provide a completed liability waiver form signed by a parent or legal guardian before the first day of class.

Course dates will be confirmed 6 weeks in advance or when all students have enrolled. A $500 refundable* deposit (Full course fee is $3,000.00 and balance is due by July 24, 2025) is required to reserve your place. Due to the intense nature of this course, we are limiting space to only 6 students to ensure each student receives individual, hands-on attention. A project outline questionnaire will be sent out for completion and return prior to course starting.
Discover your creative flair and learn a variety of skills to take your baking and decorating to the next level. Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.
Are there specific requirements for joining?
This course is suited to complete beginners and those wishing to improve their baking and sugar-craft skills.
Course Aims
Learn the skills needed to professionally cover and embellish wedding and celebration cakes, cookies, cupcakes and cake truffles using different techniques of royal icing, buttercream, ganache, fondant, modeling chocolate, sugar florist paste, and sugar lace. Skills you will learn include:
Baking success principles including weighing, measuring, scaling, converting and costing recipes
How to bake, level, torte, dam, fill and cover a sponge cake
Covering ‘Dummy’ (Styrofoam Tiers) cakes with fondant (for display and portfolio use)
Using roll out and paneling methods for covering regular and double barrel cakes to obtain sharp edges and cover with fondant
Creating Cake Lace from scratch, using commercial mixes and alternative methods
Dowling, stacking and packaging for successful transportation
Creating and decorating Cupcakes, French Macarons and Sugar Cookies to compliment your celebration cakes
Royal Icing techniques including stencilling, embellishing with piping work, brush embroidery & gilding;
Pulling design elements together successfully including dusting, painting, and coloring;
Staging photographs for your portfolio (including use of our backdrops, props, and lighting to produce professional images for all your course projects)
Marketing, advertising, and finding the right clients
Costing, pricing, and profitability- how to get paid what you deserve!
Setting up for success- contracts, deposits, insurance, licenses, etc.
Students will be supplied with the Professional Tool Kit (see full list below) which will be theirs to keep at the end of the course.
*If there are not enough students for a scheduled module, or for whatever reason the class needs to be postponed your deposit (and any installments) will be refunded in full or you can choose to carry it over to the next scheduled course.
Balance of course fee is due four weeks (July 24th, 2025) before class commences to allow time for materials to be ordered. You will be notified 6 weeks in advance or when all six spots are reserved, whichever comes first to confirm booking. Please do not book flights until your spot has been confirmed.

Pane di Pasqua is a traditional Italian Easter bread. This slightly sweet and puffy bread is braided into a simple ring decorated with dyed eggs. This bread will be a beautiful showstopper on your Easter table.
You can make this recipe into six smaller bread loaves, or divide the loaf in half and make two larger loaves. Twisting the dough into a ring-shape allows it to nestle six colorful eggs that you dye yourself in your colors of choice, making you feel like a kid again.
Multicolored sprinkles are optional but they add a fun and colorful twist to this traditional bread.

Join Mary Storey for a fun evening making THREE varieties of delicious Rugelach. Is it a pastry or a cookie? Well, technically it’s a pastry disguised as a cookie so you can call it a pookie or a castry if you like, but really who can talk with a mouth full of Rugelach?
You’ll start by selecting your THREE Fillings: A Fruit Filling, Cinnamon Sugar (with or without nuts) and a Chocolate version.
Using dough that has already been prepared (as it has to be refrigerated overnight) you’ll learn the different rolling techniques for both the Crescent and Pinwheel versions. While your cookies are baking, you’ll make a batch of dough to bring home so you can recreate these festive treats whenever you like! You’ll finish the class by sampling your instructor’s cookies so you can take your masterpieces home!

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Dessert: Panna Cotta with Fresh Berry Coulis and Almond Cookie Crunch
We will start off the day making our Panna Cotta and Fresh Berry Coulis (almond cookie crunch will be provided but recipe will be given) then students will make Ciabatta dough for rolls. Once the bread dough is made we’ll will begin work on our lunch- making Semolina Pasta Dough (to be used twice during class once for lunch and again later for hand cut noodles) while the dough is resting they will begin chopping veggies and preparing the Minestrone Soup. While the soup is simmering on the stove they will shape the pasta for minestrone. After lunch is eaten they will shape ciabatta rolls and second proof. Then students will begin working on Baked Ricotta Gnuderi making the dough and sauce and assembling to be baked later at home or frozen for another time. Finally ciabatta will be baked and you’ll finish by rolling and hand cutting noodles and learning how to assemble the classic Cacio Pepe Sauce.

While your breads are baking Angela will teach you to make a compound herb butter too!

Each March 19, St. Joseph’s Altars -- traditionally elaborate, three-tiered presentations of seafood, breads, pastry and citrus -- can be found in private homes, churches, community centers and even hotel lobbies, grocery stores and bars in U.S. cities where large Sicilian immigrant populations settled in the early 19th century.
In this immersive class, as you learn the step-by-step, cookie-making process, you’ll also hear the fascinating tale of the la tavola di San Giuseppe that began in the Middle Ages in Sicily, when that island nation prayed to the saint for relief from famine. On the saint's feast day, March 19, Sicilians still build altars in thanks.

During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! Plus, you’ll receive several recipes for using up your discard!
While we’re waiting for all our recipes to rise, you'll begin your starter or 'Mother' and learn the importance of feeding and watering to nurture your starter. You'll also make a ‘stiff starter’ using our house starter to take home with you—perfect for making those gorgeous artisan loaves.
