During this FULL DAY Sourdough 101 Masterclass with Angela McEllin you’ll start the morning learning how to make beautiful decorative designs and scoring on a batch of dough that’s been prepared for you. While that loaf bakes, you’ll start your own batch of sourdough to bring home...and get to go through all the stretching and folding throughout the day! We’ll work our way through several recipes (all of which you’ll bring home with you) including Sourdough Herb Crackers, Sourdough Ciabatta and Sourdough Fougasse! So many of you have requested this class after you've enjoyed Brian's Focaccia Pizza for lunch at one of our full day classes, we've finally picked a date! We'll have a batch of dough ready for you and Brian will teach you how to make the dough (you'll go home with your own batch of dough so you can make more focaccia pizza's over the coming days.) While your dough is resting, Brian will teach you his signature sauce (the one he's been perfecting for the last couple of years) and the secret technique he uses when baking the pizzas to get that rich depth of flavor. Dig into a delicious, homemade Cajun meal in this immersive class that reveals the step-by-step process for making no-fuss shrimp étouffée at home. The dish, now a staple in New Orleans restaurants and homes, got its start in rural Louisiana with Cajun home cooks.

Étouffée (from the French word for “smothered”) is a Cajun and Creole dish traditionally made with shellfish cooked in a fragrant, luscious sauce.

Join local cookie artist Doshia Freeman from Sweettrade Bakery for a wonderful day creating this completely edible multi-media Edgar Allen Poe Gingerbread House. Unlike the House of Usher, this house won’t fall (unless little hands and mouths start nibbling on it!) You’ll learn a huge variety of decorating techniques and go home with all the recipes, instructions and your completed house- you can use it as an edible centerpiece for a halloween party or keep it for years to come!

You’ll learn to…

  • Use Isomalt to create your Edible Windows and Portrait ‘Glass’

  • Create various textures on your modelling chocolate using our macabre rolling pins, texture matts & decorating tools

  • Use Royal icing for stencilling, piping, glueing your house together and decorating your board

  • Use Silicone Molds to create your Raven, Door, Skulls, Books, Picture Frames, Roses & Tombstones

  • Paint, Dust & Airbrush using Edible Luster Dusts, Petal Dusts and Edible Airbrush Paints

Let Keri Cossette show you how to make this devilishly delicious cake. Layers of brownie cake, peanut butter mousse, peanut salted caramel, shortbread crumbles & chopped peanuts. Students will first make the brownie cake and while that bakes and cools they will make peanut butter mousse, & peanut salted caramel sauce. You’ll get a demo on how to make the shortbread crumble (some will be provided to you to finish your cake). After everything’s made you’ll learn how to assemble and decorate your cake and pipe a drip with your caramel sauce and chocolate ganache. Plus, raid Angela’s Candy Cart and Sprinkle Stash for all the candy and bling to garnish your cake!

Join Mary Storey for an enchanting evening making the quintessential French delicacy the Madeleine. Are they cake or cookies? Well, technically they are little cakes and baked in a special madeleine pan, but due to their size, they are widely considered a cookie (or biscuit across the pond.) While your madeleines are baking you’ll get to indulge in a platter of Mary’s ready made yummies.

Once your madeleines are baked and cooled you’ll learn to temper chocolate (and color it if you desire) to cover your madeleines. Mary will also teach you to create some simple designs and to use edible gold leaf to decorate your little beauties.
