Brigadeiros Three Ways

Chocolate Brigaderios

  • 15g/ 1 tablespoon butter

  • 392g/ 1 x 14 oz can sweetened condensed milk

  • 30g/¼ cup Dutch Process Cocoa Powder

  • 1 cup chocolate sprinkles (we use Callebaut)

  1. In a pot over low heat, melt the butter, condensed milk, and cocoa powder, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.

  2. Pour onto a greased plate, then chill for 1 hour.

  3. With buttered hands, shape and roll the chilled mixture into balls.

  4. Roll the balls in chocolate sprinkles.

White Chocolate Brigaderios

  • 15g/ 1 Tablespoon butter

  • 392/ 1 x 14 oz can sweetened condensed milk

  • 1/4 teaspoon salt

  • 90g1/2 cup good quality white chocolate (we use Callebaut)

  • 1 cup white chocolate shavings/lightly toasted shredded coconut/finely chopped toasted nuts

  1. In a pot over low heat, melt the butter, condensed milk, salt and white chocolate, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.

  2. Pour onto a greased plate, then chill for 1 hour.

  3. With buttered hands, shape and roll the chilled mixture into balls.

  4. Roll the balls in topping of your choice.

Dulce de Leche Brigaderios

  • 15g/ 1 Tablespoon butter

  • 392/ 1 x 14 oz can sweetened condensed milk

  • 1/4 teaspoon salt

  • 150g/ 1/2 cup Dulce de Leche

  • 1 cup sugar crystals mixed with 2 tablespoons cinnamon

  1. In a pot over low heat, melt the butter, condensed milk, salt and Dulce de Leche, stirring continuously until you can see the bottom of the pot for 5 seconds when dragging a spatula through.

  2. Pour onto a greased plate, then chill for 1 hour.

  3. Shape and roll the chilled mixture into balls.

  4. Roll the balls in cinnamon/sugar mixture.
